Our last stop is the local sake and craft beer brewer Ishikawa Brewery in the town of Fussa. This is an innovative sake brewery that more than 130 years ago also took up the challenge of brewing beer and other beverages while respecting tradition.
In 1998, Ishikawa Brewery returned to brewing beer for the first time in 111 years under the name Tama no Megumi. The brewery brews beer in a variety of styles, led by fragrant pale ales as well as pilsners, the king of Japanese beer, and dunkels with the deep color of roasted barley. Other styles include TOKYO BLUES, which has a fruity fragrance. These varieties stand out as truly authentic craft beer brewed in the Tokyo region.
All of these craft beers can be savored along with pizza and pasta at Fussa no Birugoya next to the brewery. The restaurant's signature dish is sake lees cream cheese pizza with sakura shrimp, prepared with sake lees made with Ishikawa Brewery's own Tamajiman sake.
